Creamy Strawberry Chocolate Chia Pudding
My friend Lucy calls chia seeds "amazing little bladders of water". Chia seeds swell up in liquids and become gelatinous, like tapioca pearls. They are a wonderful source of calcium and omega 3 fatty acids, and will keep you full for a long time while drawing out bad cholesterol out of your body!
Ingredients
- 1/2 cup raw cashews
- 1 - 1 1/2 cups water
- 3 T agave nectar
- 1 inch vanilla bean
- 1/2 - 1 cup diced strawberries
- 1 t lucuma powder
- 1 T raw cacao
- 4 T chia seeds
Directions
- Blend the cashews, water, agave, vanilla, strawberries, lucuma and cacao to make a creamy nut milk.
- In a small bowl, or in 2 cups with 2 T of chia seeds in each, stir the chia seeds with the strawberry milk until the chia seeds are well coated.
- Drink immediately, or set aside until the chia seeds have gelled and you have a tapioca-pudding like bowl of deliciousness.

and they ARE little bladders of water. I LOVE THEM! I take a "swig" or two or five daily of them! I once was getting a dehydration headache and took two big swigs of chia gel and my headache left! THAT quick. Amazing isn't it how a teeny little seed can be sooo powerful. Just shows the power of Nature and size DOESN't matter...!
There was once a little nut that became a mighty oak!

I made this but don't have cashews, used Brazil nuts instead and added a good CUP of already gelled Chia seeds. It is YUM-OH!!!

Made it on Sunday morning for breakfast, and served it with a bowl of cubed pineapple. Then we went cross country skiing and it was greaaaaaat. First break I took in WEEKS! I was squealing like a child. lol

Guess what? I have some jungle peanuts and in my mind I was coming up with a peanut-flavored chia pudding...
What I like about this strawberry/choc/chia pudding is the seeds from the strawberries and the chia seeds - I swear it tasted like biting down on little sweet bursties. Don't want to call it sugar, but it is Nature's sugar. Soooo good.

OH SNAP! You know what I just realized? I didn't blend my strawberries! What the? Oh well. Next time I'll have to do that! That is too funny! I kept thinking Velvet's looks way creamier than mine...
