Raw Sauerkraut Question

I finally tracked some down... and bought it.

Opened it up last night and... HUH? The texture is all... well, different. It's mushy... no lovely individual strands of vinegary cabbage.

Is this normal?

I would say that is not normal, at least not compared to the unpasteurized sauerkraut I have had. Mine had a crunch. I bought Bubbies brand. There was another brand on the shelf but for twice the price and half the content. Yeah right!

Hey Beckla,

I started making my own sauerkraut last winter and one of the indications that it is not good is that has gone soft. Sauerkraut should definitely retain its crunchiness.

Sorry for such a disappointing experience.

I'm actually just about to make a new batch in the next couple of days... Too bad I can't send you some!

Perhaps sometime you could explain how you make your sauerkraut. I've wanted to try this but haven't been brave enough.

I have a whole set of directions in the Cafe Gratitude cookbook. Maybe I should bite the bullet and try it myself!

Gigi,

I've got the whole process documented with the intention of doing a blogpost about it. I just haven't gotten around to putting it up yet.

But now that I see there is some interest in it, I'll set my intention to do that soon, esp since I'm about to make a new batch.

In the meantime, here's a link to the place where I got my sauerkraut maker. I absolutely LOVE it! It is super reasonable ($20) and ensures that the sauerkraut is airtight, which is key, otherwise it can develop unwelcomed bacterias. Plus, It is SO MUCH FUN to watch the fermentation process as it causes the color of the cabbage to change and the air bubbles to get released. Guess you'd have to have one to see what I mean! lol

That looks great. But I am the only raw foodist in the house, let alone the only one who has ever liked sauerkraut! Would a 1 gallon jar be too big for me? While I love sauerkraut, I don't think I want to make it a daily thing.

I know it sounds like a lot!

However, sauerkraut keeps for months on end in the fridge. Plus, you might find neighbors (like ours!) who'd be interested in giving you a hand (or rather a couple of mouths! he he)
