Simplicity itself! For those days you crave something warming but are pressed for time!

Ingredients:
- 2 carrots
- 1/2 avocado
- 1 tsp fresh ginger, chopped
- 1 tbsp fresh lemon juice
- 1 garlic clove
- 2-3 cups water (warm if so desired)
Garnish:
- 2 tbsp raw vegan pesto
- 2 tbsp
raw vegan sour cream
- sprouts, if desired
- red pepper flakes, to taste
Preparation:
Blend all soup ingredients together with enough water to reach your preferred consistency. Pour in bowl and garnish with sour cream, pesto, sprouts and red pepper flakes.
