Rich Cheddar Sauce
This is hands down my favorite cheese! Delicious in sandwiches, pizza, lasagna and served over zucchini pasta. Or try it on marinated broccoli and dehydrate the casserole at 110 for a few hours.
Rich Cheddar Sauce
Adapted from "Rejuvenate Your Life" by Serene Allison
1/2 large red bell pepper
¼ c water
1 c raw cashews, sunflower seeds, and/or almonds (I use a mixture of these and soak them overnite)
1 T tahini
2 T nutritional yeast
1 ½ teaspoon sea salt
2 teaspoons onion powder (or a small slice of onion or 1 tbs or so of green onions)
1 clove garlic
2 T lemon juice
Blend until creamy. Add more water if it is too thick.
Simply the best nut cheese ever!

yesterday i made a white macadamia nut cheese to go on pizza....and now thanks to this recipe and leftovers, ill change it to cheddar cheez! yummy!

so i made my white cheese into the cheddar, mixed with marinated chopped mushrooms, and made eggplant ravioli with it (added some pesto too). Boy, where they ever yummy!
Topped with a balsamic sundried tomato sauce. Mmm! have a pic to post soon, but doesnt look near as good as it tasted.
thanks for posting the recipe carmi....and i will be making this cheese again tomorrow for the base of pizza crusts that are int he dehydrator right now

OK, you gotta tell me how you make raviolis out of eggplants!!! Do you marinate them first?

Yes, do tell us, please!  I tried Alissa's turnip ravioli but the turnips never got completely soft and I didn't care for crunchy ravioli.

Coonlie,
I've made the turnip raviolis lots of time and mine aren't crunchy... Could it be that your turnip slices aren't quite thin enough?
I do mine on my spiral slicer as the mandoline won't give me the proper thickness. What are you using?

I was using my mandolin, Carmella. Maybe that was the problem - my slices need to be thinner? My husband didn't mind them but I really didn't care for the crunch.

Ahhhhh! That's probably it! They need to be super thin. I find that it also helps in terms of the taste as turnip is rather strong.

Rich chedder sauce
Teehehehe, I just gave this to my hubby with some organic corn chips and he said "my taste buds are completely fooled!"
In other words, taste's just like chedder cheese dip/sauce!
I used half a orange pepper and the color was very cheesy looking, he asked for more

Well we sure are on the same wave lenght! Someone brought that tutorial to my attention yesterday and I was totally stoked about it! Isn't it just awesome?
Man, I love step-by-step, visual tutorials! I can have such a hard time visualising how certain things need to be done!

This is probably my absolutely favorite raw recipe. So much so, that I only make it once in awhile because I make an absolute pig of myself when I make it.
